Vegetarian Paella

Vegetarian Paella

Preparation Time: 20 Minutes..... Cooking Time: 25 Minutes

1 tablespoon olive oil
1 clove garlic, crushed
1 medium brown onion (150g), sliced
1 cup (200g) long-grain white rice
500g broccoli, chopped
1/4 medium cauliflower (375g), chopped
410g can tomatoes
2 cups (500ml) water
1 Large carrot (180g), chopped finely
1 medium red capsicum (200g), chopped
1 medium green capsicum (200g), chopped
1 teaspoon paprika
2 teaspoons chopped fresh oregano
1- Heat oil in Large Pan; cook garlic and onion, stirring, over medium heat about 2 minutes or until onion is soft. Add rice; cook, stirring, over medium heat 3 minutes.

2- Stir in broccoli, cauliflower, undrained crushed tomatoes and water, bring to boil; boil, uncovered, about 10 minutes or until rice is tender and most of the liquid is absorbed.

3- Add remaining ingredients, mix well; simmer, covered, about 5 minutes or until capsicum is soft-
